Parcs is a small wine and ferment bar at 198 Little Collins Street, an evening-to-late place to drop by for snacks, a full dinner and drinks. The latest venture from our group, it is a tiny bar with a big mission. The menu is informed by sustainability and minimal food waste, giving surplus and rescued produce a second life.
Parcs’ cuisine is “from everywhere” – unbound by geographical location, each dish sprinkled with some sort of ferment – without compromising on flavour and deliciousness. It’s accompanied by a just-as-interesting wine list by the glass and bottle. Small-batch, organic and biodynamic minimal intervention wines intended to morph across the week, and kombuchas and cocktails made with the same rescued produce and second-life principles.
