The Hotel Windsor's Executive Chef
Executive Chef Joel Alderson has worked and trained with an array of industry heavyweights, including highly esteemed Dan Hunter at Dunkeld’s The Royal Mail and Ben Shewry at world-class Atticain Ripponlea.
In March 2012 Joel joined the team at The Hotel Windsor and was later promoted to Executive Chef, with a vision to put hotel dining at the forefront of diners’ minds by affirmatively highlighting The Hotel Windsor as a top dining destination within Melbourne and Australia.
In his own words, Joel describes his cuisine as subtle, seasonal and textural, and says the greatest influence on his style of cooking has come from the time he spent at The Royal Mail, where the natural approach made popular by Mugaritz made its mark.
