Executive Chef Joel Alderson
Executive Chef Joel Alderson has worked and trained with an array of industry heavyweights, including highly esteemed Dan Hunter at Dunkeld’s The Royal Mail and Ben Shewry at world-class Attica in Ripponlea.
In March 2012 Joel joined the team at The Hotel Windsor and was later promoted to Executive Chef, with a vision to put hotel dining at the forefront of diners’ minds by affirmatively highlighting The Hotel Windsor as a top dining destination within Melbourne and Australia.
In his own words, Joel describes his cuisine as subtle, seasonal and textural, and says the greatest influence on his style of cooking has come from the time he spent at The Royal Mail, where the natural approach made popular by Mugaritz made its mark.

The Cricketer’s Bar at The Hotel Windsor offers a warm and relaxed atmosphere in the heart of the CBD, accented by casual dining and an outstanding collection of cricketing memorabilia, courtesy of the Melbourne Cricket Club.

Chinese New Year's Eve Banquet
Borrowed Space collaborators, chefs Joel Alderson (Royal Mail, Attica, Brix) and Adam Liston (Cutler & Co, T8, Northern Light) will reunite to create a Chinese New Year’s Eve banquet at The Hotel Windsor on Sunday 7, February, at 6.30pm.
The banquet will showcase Australian produce while incorporating the vibrant Chinese flavours and style of dining. On arrival, guests will be served ‘Eight Treasures’, a unique selection of Asian influenced appetizers, followed by eight-courses served banquet style.
Each dish will also be matched to Australian wines and herbal teas, handpicked by Sommelier, Ainslie Lubbock (Royal Mail, Attica, Cutler & Co).
Housed in the beautiful Grand Ballroom, guests are invited to sit in traditional Chinese ‘banquet style’ on long tables, while talented Chinese Musician, Meng Wang, accompanies the exquisite food.
